I always thought they were more like mindless beasts most of the time, hence why the Kemono girls have their whole calming ritual dance thing for them

But no turns out according to pokopia most legendary Pokemon are in fact just kinda chill guys most of the time

Then again I guess given you are a Pokemon in the game and not a person you could always say they're just relaxed around other Pokemon but not people I guess

I always imagined that the Pokémon all must have more of less human intelligence.

I prefer to think of them as "slightly smarter animals".

Like, it's cuter, more endearing and interesting if they still behave like animals, but clearly they have a much greater understanding of humans than most.

I have always thought that most Pokemon outside a few certain Pokemon like Alakazam and Metagross that are known for having super high intelligence (I guess Mewtwo and other Legenderies too) tend to be at a some of in-between stage.

They're not quite dumb animals but they're not fully human intelligence. Smart enough to understand commands and have a sense of self awareness but not enough to form languages and societies if you get my meaning.

Well, the show had Meowth who clearly showed human intelligence; and there were several episodes that focused on the Pokémon (where they spoke 'human' and acted very human-like), so that's the reason why I never considered them to be 'animals'.

My observation is that what set pokémon from a species apart from humans are two things:

Elemental attacks
They come in "types" which correspond to both how they adapted to their environment and the powerful attacks they can use with little explanation of the biology around them. Such as Fairy-Types using magic or Ghost-Types able to weaponize pure-fear.
All that is known that powers these attacks are called "Power Points", which means these elemental attacks still require a reserve of energy from the pokémon to use.

Evolution
Humans call it evolution, but it looks more like a cross between natural metamorphism for some animals (such as axolotles to salamanders via neoteny) but hurried with something like regeneration (from Doctor Who).
For a Time Lord, regeneration is when each and every cell in their body release an energy that both burn off and replace said cell, appearing as if the body is erupting in light. The Time Lord's memory and identity remains, but given they are technically a whole new person with different brain and personality, but at their core, still same person. Unlike Time Lords, evolution outcomes seem to be coded for the pokémon, though they may have changes in personality after evolution.
Thing is thoughh, things that give off light, gives off energy.

Unless it's some game I missed, I don't know if the "energy" from elemental attacks and evolution have anything to do with one another. I also don't know if pokéballs respond to this cellular energy on how they catch pokémon over other lifeforms.

My guess what makes Legendary Pokémon regarded legendary is because of how elusive and unique they are. But Legendary Pokémon are also credited as being rather powerful, even though after capturing them, they are simply high-level. My guess, Legendary Pokémon could possess more of this mentioned "energy" than other pokémon which gives them powers that seem other-worldly, even by pokémon standards.
