Am I the only person in America that loves gingerbread? Like, it's fucking Christmas time and I can barely find any grocery stores around here that sell gingerbread cookies/biscuits that are not part of some overprice gingerbread house kit!

I kind of wonder what authentic gingerbread cookies really taste like.
We have something called "peperkoek" that is often the translation of gingerbread. But that's mostly solid, but soft like mouche in texture. I don't know if gingerbread cookies are really like that.
Another style of Belgian sweets is Speculoos, which is very relevant with Saint Nicholas today (or kruidnoten for that matter)
I feel like that's properly more alligned with the gingerbread cookies I have seen so far in appearance.
Erh, kruidnoten and speculoos are also quite different though, but perhaps one of these.

Since then, there are a number of different traditional regional variations.
So what I am referring to as 'gingerbread' in OP would be American style, the style that dates back to the colonial period and typically uses only ginger, cinnamon, and ground cloves, in both crispy biscuit form and as a soft cake.
