Our time is not unique in those regards.  (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4769964/.)  At many other times and places with similar sleep patterns, home ownership, and financial conditions, there was no obesity epidemic.  Looking at the population level, the seed-oil theory does much better at explaining the obesity epidemic.

Which is the inevitable outcome of capitalism. Pure capitalism may accommodate greed but severely underestimates it when it fails to prevent the state necessary for property rights to be enforce from being seized by the capitalist class. How is the seed oil situation in Belgium?  Can you easily find food products such as salad dressing that are free of seed oils?  Or are most things polluted with seed oils, like they are in the US?

I'll be honest and say I don't have the slightest clue what seed oil or GRAS is. Is GRAS like grass, or is it like mardi gras? I thought mardi gras was a good thing? Personally I think Gender ReAssignment Surgery is a good thing.

Isn't the point of fast food to be a) fast and b) cheap? Like long-term health shouldn't really factor into it, that's not the point. You're hungry and you want food and you want it now. If it's cheap and fast and tastes good it's good fast food.

The real problem is that people are having to rely on fast food because everyone's fucking poor and can't afford anything healthier or more complex. And even if they can, they probably don't want to cook after they get home from 25 hours in an Amazon warehouse where they didn't get to pee.

It's a relatively innocent thing that capitalism has twisted into something perverse and malicious because it fucking does that to things.

Kawaii inu!  Seed oil is oil that comes from seeds.  Examples: soybean oil, canola (rapeseed) oil, sunflower oil, corn oil, cottonseed oil, generic "vegetable oil", etc.  Seed oil is extracted with industrial machinery and/or chemical solvents such as hexane.

"GRAS" stands for "generally recognized as safe".  The FDA designates some substances as GRAS.

Oh, if only one could avoid seed oils by just avoiding fast food!  Alas, seed oils are present in many American foods, even at fancy sit-down restaurants.  Most salad dressings sold in grocery stores are loaded with seed oil.  Many people even cook with seed oil at home!  For a long time, there was a widespread consensus that seed oils were actually healthly.  Only relatively recent have people wisened up to the perils of seed oils.

It's worst when you cook with it at high temperatures, because it gets oxidized.  And as with most things, dosis sola facit venenum --- the dose makes the poison.

If you use sesame oil the same as traditionally in China (and to the same extent), it's probably not too bad, because if it were, we would know because Chinese people would have historically been much fatter than in actuality.  Most of the rodent studies looked at soybean oil, not sesame oil.

Out of interest I checked, Ghee is crazy expensive. Like, avocado toast as your average meal expensive. Coconut oil is also like a good wealth tier above seed oils.
I couldn't find avocado oil yet.

Unfortunately no, unless your bacon comes from Denmark or another country that doesn't feed seed oil to their pigs:

Beef tallow is fine, though; cows convert PUFA to saturated fat.

For low temperature cooking, regular butter is fine.  Or you can clarify your butter to make your own ghee for higher-temperature cooking.

Olive oil is another good oil, although it's not suitable for high-temperature cooking.
