What is their spice blend?

Cajun, little bit of heat to it. Hits just right.
Sweet BBQ, ketchup base. Probably has honey in it, as that's what they use to make their peanut butter sauce.

They don't overdo themselves on it. Rare I can find perfect fries like them around here. Most places do an under-cooked unseasoned steak fry that just depresses me.

There is nothing as telling about the quality of a place as fries.
We hand-cut ours and then do a blanch in oil before letting them cool and then going in for a second. Keeps the insides fluffy and the outside crispy.
Season with a mixture of onion and garlic powers, salt, pepper, paprika, and a bit of cayenne.

If you ever find your way to Hemingway, SC it is illegal to not stop at Scott's BBQ. They are a treasure of SC and worth every penny.

I try everything we cook. I have been known to have the "pregnant pallet" sometimes so I do enjoy goober burgers.

I need to make something nice for the lab people at Wolf's work at some point. Maybe eclairs.

This is such a large burger!!  in nyc, maybe our best burger is the Emmy burger, maybe. But it is 31$ and frequently sells out by early noon :c

That is so neat... a dawn bakery sounds like it would be, the best thing of all!

I love everything that you've just said. It's about getting the basics right. If they can't put effort into doing a good fry, then odds are they won't put effort in elsewhere.

I never turn down an eclair. Nor a cookie or especially a perfect brownie.

Oh yes, you showed me a laughably sized portion of BBQ too a year or two back. That quad burg cost about 14 dollars. With fries and a drink.

White chocolate and espresso muffins
French omelet stuffed with parsley and brie.
Lemon turmeric pancakes
Polenta made with mushroom stock.
Overnight Oatmeal with golden currants, figs, and apricots, topped with house-made granola and fresh berries.

Exactly! Another thing I do is take a walk behind a kitchen. If their backdoor looks like shit then god help you what it looks like inside.

It is closer to FIG but it would be an extra hour drive.

I think so! But then again I got people looking at me strangely for salting a watermelon.

Best tip for eclairs is when you have the choux in the mixing bowl and it is cool enough for the eggs to be added, once you can make a V with a paddle and it stays in a solid mass it is done.

I should demo it one day here.

My grandpa used to do that. He also ate catfish with just lemon as seasoning. And I'm talking like, 3 lemons.

It is really easy for most places. Most of the time you will see the cooks coming in and out of it depending on where the walk-in is. Normally close to where their trash cans are.

I will keep that in mind for the next day I have off.
A good demo for stock-making, eclairs, and maybe roasting chicken and making pan sauces.

Eclairs, please. I wouldn't mind advice on what to do with my leftover pork drippings either though. I make pernil and usually just delegate the drippings to make dirty rice.

Oh honey you have the best weapon there.
So, I would strain them through a cheesecloth to remove any solids from the drippings, and then store them in a container of your choice. Something that always is good for that is homemade gravy. Make a roux and add the drippings and you have an extra delicious gravy!
Or save the drippings and make a sauce from them.
The best way to do that is to reduce the filtered drippings in a pan and add cold butter a bit at a time until it is thick.
Pour over some chops.

I thought you would like it little moon.
As if I could ever open a cafe and have it not be a home for everyone.

Oh, mine just welded steel into a box 6 feet high and layered wire racks into it so all the meat drippings would fall onto and marinate each other. Still, spooky stuff. He not only sharpened the kitchen knives but made sure everything was sharp. Bless then old man he could take a tree trunk and turn it into a work of art with just a pocket knife.

I wouldn't put it past Papa Lamb from having more than one child outside of his marriage

A little trick for mash, take a head of garlic drizzle a bit of oil on the top of it, wrap it in foil, and back it in the oven at 350F for about 30ish minutes or until it is soft and caramel-colored.
When you are mixing the butter and cream into the potatoes add the roasted garlic to it. Then you have roast garlic mashed potatoes. Season with salt and white pepper.

Questions? With so much adventure in a month or so... If you could have taken a few more days at one of the places, which place would you have spent them at?

I always get an urge to throw crates of tea into the sea whenever I have a good burger. Burgers must be American patriotism distilled into an easy to handle food.

Sister's boyfriend is very interested in architecture so New York will be a very cool place for him. Any tour with you as a guide will be great. I'll let you know if something more concrete comes of it. I sure hope something does come of it.

Would definitely like to meet up with both of you, we could go have tea/hot cocoa again or something! I would be happy if I could be the excuse you both need to actually meet up again!

Hopefully we can do it again sometime!
I'll never go near Belgium without notifying you, that's for sure!
